Neapolitan pizza toppings
A few ingredients, well chosen, in the right order. These are the combinations worth making at home.
Three rules before you start
- Weight: 70–80 g of sauce and 80–100 g of cheese are enough for a 30 cm (12 in) pizza.
- Moisture: drain the cheese and grill or sauté the vegetables. Water is the enemy of a crisp base.
- Heat: anything that only needs warming (prosciutto, arugula, burrata) goes on after baking.
